Hi Jill -
while I don't teach this specific course for health educators, we use a great technology book with our preservice teachers. I have provided the link below for you. The books name is Teaming Up On Technology and is published by AAHE. Hope this helps.

Subject: REPLY TO JILL BLACK: Computer Applications Syllabus
** AAHE in March...Be There!

Jill,
The syllabus for my computer applications in health education course can
be found at:=20
http://www.csuchico.edu/hcsv/syllabi/Fall%202006/260-01.pdfI'm upgrading the course for the fall 2007 semester to include more
Photoshop, basic spreadsheet, and other software exercises. I'm also
developing a new e-portfolio template. The exercises will be digital
supplements to my textbook: Tomita, M. (2003). Say It With a CD:
Creating CD-ROMs for Effective Communication. Santa Cruz, CA: ToucanEd
Publishing Company.
In the present course, students are being prepared for electronic
publishing in health education. They are required to develop an
e-portfolio and a health education CD-ROM. These projects pull together
skills learned throughout the course. The students learn:
1. MS Word Advanced - How to format a journal article for publication,
including tables, figures, images, etc.
2. MS Word- MS Word fillout forms.
3. PowerPoint- basic PPT plus making their PPT interactive and linked
with other files, integrating video, audio. PPT are prepared for class
presentation and as individual learning modules.
4. Frontpage/Dreamweaver- web page design.
5. Acrobat- creating PDF documents, PDF fillout forms, and PDF search
engines.
6. Digital Photography and Videography- students learn how to take
photos with a digital camera and digital DVD video camera, download, and
edit photos using PhotoShop.
7. Scanning- learn how to scan documents, negative, slides, and images.
8. Icon Maker- create their own desktop icons.
9. Digital Slideshow- create self-contained photo slideshows with music
(not PowerPoint).
10. Discus- creating CD/DVD labels for printing onto inkjet printable
CDs/DVDs.
11. Xenu- link checker.
12. Jaws and Duxbury (Braille translation)- students are introduced to
using the screen reader Jaws for the blind, and creating health
education literature in Braille. They are also introduced to Braille
embossers, scanners, and the Braille system. (Procedure is demonstrated
and is not written).
The students also must learn about online databases, Internet search
engines, reliable US government health information web sites,
copyrighting, product packaging, product testing, pricing, press
releases, product marketing, and program evaluation. The also learn how
to select electronic media such as business card CDs for their
e-portfolios.
I used to include MS Publisher in the course, but another course in the
health education program is covering that software so I don't cover it.
If you are interested in using my textbook for the course, I provide
instructor support. Also, I can write additional procedures to
supplement the text that is more specific for your institution.

Greetings Fellow HEDIRites:
Despite repeated requests to not send an email over the HEDIR asking to be
unsubscribed (instead I ask that such memos be sent to me directly at
kittle@siu.edu), starting immediately, any person who violates this policy
will, after they are removed, have their name and email sent to one of the
hundreds of overseas individuals dying from a terminal disease that want to
pass along their fortune to us. In addition, if I have such information, I
will also pass to these scam artists your social security number, bank
account, employment history, and medical history.
Thanks for your continued support on making the HEDIR as good as it is.
