Subject: hospitality industry

I am presenting a nutrition class to a group of hotel/food and beverage workers. Does anyone know of some good resources, books, presentations, etc that touch on the hotel/F&B culture (working long hours, surrounded by food, stressful environment, smoking is common, etc.) and how to work on being healthy even with such challenges?
